Chicken Jalfrezi

Yummy dry chicken curry with the key ingredient : green capsicum...
This recipe serves 3-4....goes well with chapatti, prata or rice :)

Ingredients :
400 gm chicken fillet (cut into 2 inch pieces)
1 green capsicum (diced)
2 onions (sliced)
5 cloves garlic and 2 inch ginger (made into a paste)
2 tomatoes (diced)
1 tsp garam masala
1/2 tsp turmeric powder
1/2 tsp salt
ghee
1/2 tbsp chilli powder
1 tbsp tomato puree
2 tbsp cooking cream
salt (to taste)
olive oil
water

Method :
1. Marinate chicken with ginger-garlic paste,  turmeric powder, garam masala and 1/2 tsp salt for about an hour in the fridge. Remove before cooking and set aside.
2. Heat ghee in a pan/wok. Saute the onions till slightly soft. Add in the capsicum and cook for about 5-8 mins. Add in the tomatoes and cook till capsicum and tomatoes are soft. Remove from heat.
3. In a non-stick pan, heat some olive oil and stir fry the chicken till half cooked. Add in the capsicum mixture, chilli powder, tomato puree and some water till it forms a thick gravy. Add salt to taste. When chicken is tender, stir in the cream, mix well, cook for about 3 mins and remove. Chicken Jalfrezi is ready to serve...;)

Penne with Spicy Tomato Chicken

Made this for dinner.....
Ingredients :

-boiled and drained penne (keep aside)
- Chicken strips or skinless breast (chopped to small pieces)
- 1 onion
- 2-3 cloves garlic (chopped)
- 1/2 tbsp chilli powder
- Small can of Prego mushroom tomato pasta sauce
- olive oil, salt, mixed italian dried herbs

Method :
- Heat olive oil in a non-stick pan. Saute onion and garlic till fragrant.
- Add chicken and fry for about 5 minutes.
- Add Prego tomato pasta sauce. Add chilli powder, some water and let it cook well and thickens. Add dried italian mixed herbs (about 1 tsp).... Add enough salt to taste.
- Serve with the penne.....Sprinkle some Parmigiana on top for a cheesy touch...

Blueberry Prune Smoothie

This is another smoothie recipe.....and even easier....I used a handful of blueberries, chopped seedless prunes, 2 tbsp of mix berries yogurt and 3/4 cup of ice water....very refreshing....:)

Berry Banana Smoothie

It was such a hot day so made myself a cooling glass of smoothie ;)

I used 1 banana, 8 strawberries, a handful of seedless grapes, 2 tbsp of mix berries yogurt, 1/4 cup of orange juice and some ice cubes.....blended it in high....and it's ready to serve ....
